Locro – Ecuadorian Typical Potato Soup Recipe

Ingredients:

Preparation:

Wash, peel and cut the potatoes into medium sized squares. Dice the garlic, cutting it into very small pieces. In a pot with hot achiote oil, add the garlic and potatoes and cook until the potatoes become golden in colour. Add water to the mix and bring to a boil, letting the potatoes cook for about 20 minutes.

Mash the potatoes in the pot and insert an entire chili pepper without cutting it. Wait until some water evaporates and you get a thicker consistency to finally remove the chilli pepper. Add some fresh cheese (cut up into little pieces) and serve the soup in a bowl. Add avocado as the finishing touch to present the soup.
