September 2011 marks Chile's bicentennial celebration year, although the country is not celebrating independence per se, but rather the creation of the first Board of Governors. The vast majority of Creoles who attended this fateful meeting (436 to 14 Spaniards) established a "Provisional Government Board", swearing allegiance to King Ferdinand VII, but claiming Chile as a free country from that day on. Definitive independence from the Spanish crown was only achieved when Bernardo O'Higgins signed the "Oath Act of Independence" in 12 February 1818, nearly eight years later.
Chile, and specially Santiago, will celebrate this momentous occasion throughout the month of September. Cities up and down the country will be full of celebrations to welcome spring and celebrate the bicentennial. Expect to meet outdoor music, theater in plazas, colorful streets, top gastronomy, wine and the typical Chilean chicha as a beverage in the unique "fondas".
